3 cloves of garlic crushed or chopped in small pieces without the peel
3 hot dried chili peppers or one fresh hot red pepper chopped in small pieces
fresh ginger peeled and chopped in small pieces or rasped fine
2 shallots or one red onion chopped in small pieces
brown/gold/sugar or tamarind
sea salt
a pinch of black pepper
2 tomatoes or coconut milk or both
roasted peanuts or macadamia nuts (crushed or mixed into very small pieces at the end in sesame oil) or 4 spoons of peanut butter
1 lime or lemon juiced into, you can chop it in 2 parts and add to the sauce
simmer slowly garlic and the peppers in hot oil, add slowly the rest
you create a sauce that is to be eaten with anything from BASMATTI RICE to chips, roasted chicken or just with your ciabatta bread! Now try to stay away from! HOT-SPICY/SWEET/SALTY/SOUR/CRUNCHY AND BITTER at the same time. An excellent prevention that gives the life a unique taste.
